History
Ruby Tuesday was started by Samuel E. (Sandy) Beall III in 1972. Beall had an idea that would later lead to the formation of one of America’s favorite foodservice brands. His vision was to build a restaurant where food and drinks were both fresh, full of quality ingredients, full of flavor, and handcrafted.
His goal was to have the food and drinks served to customers by passionate, friendly and caring people. He also wanted to create a place that was comfortable and casual, but still looked great. The idea was so special and unique that it required him and his special team to invent and work on it themselves.
The first restaurant was situated near the University of Tennessee. This later grew to more than 600 restaurants in the United States and across the world. Ruby Tuesday became a public foodservice company in 1982. In 1996, it was made a publicly traded company. It would soon join the list of some of the most beloved and well-known brands for casual dining in America.
Today, Ruby Tuesday still upholds its founding philosophy of providing quality food and beverages. It also prides itself in having the food served by passionate people. Ruby Tuesday’s executive chef is a well-known figure. Peter Glander was the sous-chef at The Modern restaurant in the Museum of Modern Art in New York City. He is the one that added the pretzel bun to the restaurant’s menu and removed its long-standing chocolate tallcake dessert.
For much of its history, Ruby Tuesday had used little to no advertising. In 2002, it introduced coupon sales to help boost its traffic and combat sale losses. It then ventured into TV, radio, and billboard advertising in June 2003. The restaurant also introduced curbside carryout which was dubbed “TueGo!”.
