One of my favorite dishes is their famous ‘Chicken Bryan’ which is a pan-seared chicken breast with sun-dried tomatoes, capers, and white wine sauce on top of a bed of fettuccini and melted mozzarella. Their Sweet Yellow Corn is also amazing!
Their menu doesn’t just feature Italian cuisine though. They offer seafood such as Chilean Seabass & Lobster Ravioli, Caribbean Coconut Jumbo Prawns, Lobster Diablo Over Linguine, Cajun Crab Cakes to name a few.
If you’re not in the mood for pasta or seafood that night, they have hand-cut steaks such as Ribeye, Filet Mignon & Jumbo Sirloin. For the vegetarians, they even have options like Grilled Portobello or Vegetable Platter which includes acorn squash, zucchini, and eggplant parmigiana.

The Carrabbas` roots
The restaurant was founded on December 26, 1986, by John Charles Carrabba and Damian Mandola, both natives of Long Island, New York. They opened the first location in Orlando, Florida and it flourished quickly. From there they decided to expand and after ten years their name became familiar enough that they were able to open up a second location in Jacksonville, Florida.
In 1993 they were approached by investment bankers who asked them to file for an IPO. But they didn’t do it because they wanted to establish themselves as a “family restaurant with old-fashioned values.”
In 2008 OSI Restaurant Partners, LLC purchased Carrabba’s with Damian Mandola still in charge of operations.
Today there are 50 locations all around the United States and their home base is still in Orlando Florida.
In 2020, Carrabba’s expanded into Canada and opened a location in Moncton New Brunswick.
Interesting fact: The original name for this restaurant was supposed to be “Amore” but at some point, prior to the opening they discovered that another store had already trademarked that name so they decided to just go with Carrabba’s.
