What are the roots of this restaurant?
The idea of a seafood restaurant went to Tim Curci and Chris Parker, who wanted to bring the fish that they love to others. During spring break, Tim Curci visited family in Florida and was reminded of his experiences with fresh fish while living in San Diego for seven years.
The two found an ideal location on the St. Petersburg waterfront at Park Shore Marina & Residences along Boca Ciega Bay. It took over three years for the partnership to open their first Bonefish Grill Restaurant on April 11, 2000.
A year later Bloomin’ Brands acquired Bonefish Grill, which is the parent company of Outback Steakhouse, Carrabba’s Italian Grill, Fleming’s Prime Steakhouse & Wine Bar and Roy’s. For the last 17 years Bonefish Grill has expanded to different locations in seven countries domestically and internationally.
